1.油菜清洗干净后焯水。

2.把焯水后是青菜用手挤干水分,然后切碎,菜一定要挤水,否则馅料湿。

3.蟹味菇切碎后在炒锅中煎炒,炒一会儿就会出很多水。

4.继续炒,把水分炒干。

5.把蟹味菇和油菜姜末都放入盆里,把食用油和香油倒入拌均匀。

6.拌了油之后,加入盐、糖和蚝油调味。不喜欢用蚝油的可以适当放一点生抽也可以提鲜。

7.拌均匀就是素馅料了。

8.酵母粉放入80克水中融化,加入面粉中和成光滑的面团。

9.发酵至2倍大小,有蜂窝。

10.分剂排气,擀成中间厚周边薄的皮。面剂我是每个约35克。

11.包入馅。

12.包好包子。

13.用不粘锅,锅中放少许油,放入包子,中小火煎大约2分钟,把底部煎出硬壳。

14.面粉和水按1:10的比例和成面粉水,水的量我用了150克,加15克面粉。

15.面粉水倒入锅中,立即盖上盖子,中小火煎大约6分钟左右,主要是根据火力大小,时间可调整,以水分煎干为准。

16.待水分煎干,可以打开盖子,继续小火煎,把水分完全煎干,底部形成冰花即可出锅。

17.倒扣出来,底部金黄。

18.底部是脆的,表面是软的,配上鲜香的素馅,我老公一口气吃了4个。
